Berry Paleo Pancakes
(adjusted from Sarah Fragoso's Everyday Paleo cookbook)
1 ripe banana
2 cups almond meal
2 scoops nut butter (I used one big scoop almond, and one big scoop walnut)
5 eggs
2 tbsp coconut flour
2 cups unsweetened coconut milk
1/2 pint fresh strawberries, diced
1 cup fresh or frozen blueberries
1 tbsp cinnamon
1 tsp vanilla
• Mash banana in a large mixing bowl with a potato masher (or fork)
• Mix in nut butter and then remaining ingredients to form a batter
• Heat a griddle or large pan over medium heat
• Coat with coconut oil and pour batter into roughly 3 inch diameter pancakes
• Allow to set and cook well. Flip, cook on other side and enjoy
Makes about 24 pancakes
